Mushroom Couscous Nuggets

A couple of weeks ago I was faced with a couple of aging cartons of mushrooms that I would ultimately have to throw out if I didn’t do something with them.  I did a once over of what I had in the fridge and pantry to try and make something tasty.

IMG_3168I look some olive oil and added some minced garlic and red pepper flakes.
IMG_3169Then I dumped the mushrooms in and some rosemary.
IMG_3170The mushrooms started cooking down and I added some salt and pepper.
IMG_3171While that was going on I cooked some couscous.
IMG_3173After a little more time this is what the mushrooms looked like.
IMG_3174To the couscous I added 2 eggs, cheese, and salt and pepper.

IMG_3177I stirred everything together.
IMG_3178I then sprayed a mini muffin tin and filled it with the mixture.  I thought it was a little dry but I thought that would lead to a crisp nugget.  I should have added some broth at this point but I was worried that it would stay together when it cooked.IMG_3179This is what it looked like out of the oven.  A little less brown than I wanted it.
IMG_3180 I think they look pretty good.IMG_3181The flavor were good.  A nice mix of meaty mushrooms, a little cheese(not enough in my opinion but it was all I had), and some rosemary.
IMG_3182To amp up the flavor I poured a little chicken broth on top to add some moisture, added fat free sour cream, and hot sauce.

Next time I will add more moisture and more cheese. I think I want it to be like macaroni and cheese but with couscous.
